Frugal Baking with Homemade Baking Mix
Are you tired of paying those high supermarket prices for "name-brand"
baking mixes?  Now you can make your own and always have enough
baking mix on hand for whatever you may need to bake!

Baking Mix

8 cups flour
2/3 cups nonfat dry milk 
1/3 cup baking powder
2 teaspoons salt
1 cup shortening

Mix all dry ingredients together in a large mixing bowl.  Cut in shortening
till mixture resembles coarse meal.  Store in an airtight container.

Here are a couple of recipes to get you started using your baking mix.

Almond Poppy Seed Muffins

1 1/2 cups baking mix                      1 egg
3/4 cup sour cream                          1 tablespoon poppy seeds
1/2 cup sugar                                   1 teaspoon almond extract

Line muffin cups with paper liners.  Mix all ingredients just till well
moistened.  Fill muffin cups about half full.  Bake at 400 degrees
for about 15 minutes or until golden brown. 
Yield: 1 dozen muffins

Garlic Butter Sticks

1/2 cup butter or margarine
1 teaspoon garlic powder
2 cups baking mix
1/2 cup water

In microwave-safe bowl, melt butter and stir in garlic powder.  Pour 
into 13 x 9 inch baking pan. 
Mix together baking mix and water with fork.  Put onto flour-covered
counter or board and knead a few times.  Roll out into a rectangle
about 6 x 10 inches.  Cut dough rectangle in half and cut each half into
12 sticks.  Dip both sides of each stick into the  melted butter in the
pan and place in pan.  Bake for about 15 minutes at 425 degrees.
Yield: 24 delicious sticks
