Growing Herbs Indoors

Growing herbs is an ancient art--for centuries herbs 
have been grown and used to heal the sick, flavor food 
and dye clothing.

If you don't have room to have an herb garden
outside, herbs are easy to grow indoors and can be 
started any time.  Here are some helpful tips for growing
herbs inside:

Some herbs that will grow well in pots inside are:
basil, parsley, chives, mints, oregano, lemon balm,
thyme, rosemary.  I have successfully started parsley
and chives from seeds.

Clay pots work best. Be sure your pots have good 
drainage holes; herbs do not like wet roots! Use any
packaged potting soil, adding a little dried manure 
and gardener's sand, if you have it. 

Most herbs will require 5 to 6 hours of sunlight
daily.  If you don't have a spot with that much
sunlight, try planting lemon balm, mint or thyme.

A good rule of thumb to start out with is to water
when the surface of the soil starts to dry out. 
Remember, smaller pots will dry out faster than large
pots. Feed your herbs once a month with houseplant
fertilizer, mixed at half strength.

When you're ready to harvest your herbs, here's a
recipe to try.

Herb Butter
1 tablespoon fresh chives
1 tablespoon fresh parsley
1/2 pound butter or margarine

Soften butter and chop herbs.  (Kitchen shears are a
good tool to use for chopping herbs.)  Mix all 
together and refrigerate. Serve with warm biscuits;
or rub it on fish before grilling.
--Experiment with adding other herbs.
